Horiatiki Salad w/ Real Feta Cheese

How to make awesome Greek salad. Also known as horiatiki salad, this salad has robust savory flavors. Crisp cucumbers, refreshing tomatoes, olives, and red onion are dressed with a tangy dressing. Buy 100% sheep's milk feta cheese for the most authentic taste, one possibly imported from Greece. A majority of feta cheese found at major supermarkets are made from cow's milk and is just salty without the complex pungent notes. Real crumbled feta cheese really makes a difference and it couldn't be tastier.
Ingredients
2 large cucumbers, cut into thick chunks
3 vine ripened tomatoes, quartered
1/2 red onion, thinly sliced
1 green bell pepper, thick chunks
4 pickled pepperoncini peppers, 1" slices
1 cup black (kalamata) olives
1/2 cup parsley, flat-leaf, coarsely chopped
1 pk feta cheese, 100% sheep's milk,
   (imported from Greece)

Dressing
2 TBSP extra virgin olive oil
2 TBSP lemon juice, fresh squeezed
1 TBSP red wine vinegar
1 tsp dried oregano, crushed
1 clove garlic, crushed and minced
2 tsp salt
1/2 tsp black pepper, fresh ground
Directions
  1. Mix dressing ingredients. Set aside.
  2. Mix all salad ingredients except feta cheese. Drizzle dressing over salad. Toss lightly. Crumble feta cheese on top. Refrigerate and chill for at least 30 minutes to allow flavors to meld.
  3. Serve Greek salad chilled. Enjoy!
